Pâtisserie is both craft and art, and at Pâtisserie Vydal we strive to perfect both. Our desserts are made completely from scratch, starting by individually selecting the highest quality ingredients available. Since we don’t start work with pre-processed products, we have full control of what goes into everything, and can use rBGH-free dairy, with qualities particularly chosen for whether it will end up in a crème, a cake, or a viennoiserie; organic, locally grown, and seasonal produce; and 100% non-GMO ingredients. Our more exotic ingredients are chosen with just as much care, and where necessary, directly imported. The results are exceptionally delicious baked goods unavailable anywhere else.

Pâtisserie Vydal is a startlingly good bakery, even without adding 'for a town like this'. The attention to detail frankly qualifies as obsessive; for example, the butter for the croissants and other viennoiseries is brought in from France, because American butter just isn't right. There's always a good selection of cakes, pastries, entremets, cookies, sweet and savoury tartes, etc., with a balance between the quintessentially French and more innovative confections, often with American or Japanese influences. There's also always a variety of shop-made chocolates and tea, and an afternoon tea special is available. One afternoon a week, there's a tasting menu of experimental confections; this is limited, so reservations are recommended.

Staff

There are always two counter staff on at any time the shop is open. They're allowed to wear their own clothing, as long as it's in good condition, presentable, and black and white; there's a black apron with the store logo in white they wear over that.

After earning his BA at FERRANDI Paris, Mr. Vydal joined the Compagnons du Devoir and apprenticed around France for another five years. As a qualified Maître Pâtissier, he moved on to work in Switzerland and Japan, and has won accolades for his marriage of tradition and innovation. PC

Miss Carr has considerable experience as an assistant to high-level individuals, and joined Mr. Vydal in 2018. Most day-to-day affairs pass through her capable hands, allowing the chef to focus on his craft.

Helped choose Gray Harbor; followed from LA once things were settled. Responsible for most things Vyv finds tedious, like paperwork and people.
